Using the New Forest as its inspiration, Cambium delivers on its promise of delighting your senses. Taking our Head Chef’s trademark ingenuity and combining it with locally farmed ingredients sets the bar for fine dining in Hampshire.
All ingredients are sourced and grown locally, ensuring they go from farm to fork in the shortest possible time. Accepting the challenge are our dynamic kitchen team, headed up by Executive Head Chef Alistair Craig, who works tirelessly on exploring new dimensions of the classic ingredients we all know and adore.
Alistair believes the enjoyment of food should engage all of your senses and be a journey through taste and flavour.
For the interior, British designers Sue and Bonnie Stowell, have drawn much inspiration from the New Forest creating a restaurant that takes advantage of the local areas rich natural resources, capturing its enchanting shapes and drawing on its warming natural tones.
